Chewy, delicious, cream cheese filled cookies with a touch of glam. Red sanding sugar makes these extra fun. Use any coloring you want to change it up.
Filling:
8 oz. of Cream Cheese (room temperature)
8 tablespoons of softened butter
2 teaspoons of vanilla extract
1/3 cup of heavy whipping cream
3-5 cups of powdered sugar
Cream together the first 4 ingredients, then slowly drizzle in the heavy cream. Add in the powdered sugar and mix until everything is combined.
Spoon out teaspoonfuls of the cream cheese filling onto parchment paper and freeze until they’re very firm, at least an hour.
Make the cookie dough:
Cream together:
1/2 cup of room temperature butter
1 1/2 cups of dark brown sugar
Add in:
-2 large egg yolks, one at a time
-A few drops of red gel color, or more to make the color more vibrant.
-2 teaspoons of vanilla extract
In a bowl, whisk together:
2 cups of all-purpose flour
2/3 cup of dutch-press cocoa powder
1 teaspoon of baking soda
1/2 teaspoon of salt
Add in the dry ingredients slowly until everything is well combined. It’s better to not chill the cookie dough at this stage, so that it’s still soft and easy to form.
Use a cookie scoop and scoop out a portion of cookie dough. Press down the middle and place the frozen cream cheese inside. Roll it into a ball ( you can chill them at this stage if you need to!)
Pour red sanding sugar in a small bowl and toss the dough ball around until completely coated.
Bake at 350 for about 15 minutes. Some of the cookies will crack and that’s totally okay :)
